Eggless Baking Troubleshooting

Every eggless bake that goes wrong goes wrong for a reason. Here are the problems we see most often in our Noida baking workshops, why they happen, and how to fix them next time.

My eggless cake sank in the middle

Why it happens. Too much leavener, or the cake was moved before the crumb had set. Without egg protein there is no strong structure holding the centre up.

The fix. Cut baking soda to half a teaspoon per cup of flour, bake at 165°C, and do not open the oven for the first 25 minutes.

The crumb is dense and heavy

Why it happens. Overmixing. Eggless batters build gluten quickly once liquid meets flour, and there is no egg foam to keep things light.

The fix. Fold only until the last streak of flour disappears. Sift the dry mix twice and use room temperature curd or milk.

The texture is rubbery or gummy

Why it happens. Too much binder. Extra flax, banana or condensed milk makes the crumb chewy rather than tender.

The fix. Stick to one binder per recipe: a quarter cup of yogurt or three tablespoons of condensed milk per egg replaced.

The cake is dry and crumbly

Why it happens. Eggs carry moisture. Replacing them one for one with a dry binder leaves the batter thirsty, and eggless bakes overbake fast.

The fix. Add two tablespoons of milk or oil per egg replaced, and pull the cake out the moment a skewer comes out with moist crumbs.

The top cracked or domed

Why it happens. The oven is too hot, so the outside sets before the inside has finished rising.

The fix. Drop the temperature by 10-15°C and bake a little longer. A damp cake strip around the tin gives flat, level layers.

There is a soapy or metallic aftertaste

Why it happens. Unreacted baking soda. Without enough acid it never neutralises.

The fix. Pair every half teaspoon of soda with an acid: curd, buttermilk, lemon juice or vinegar. Otherwise use baking powder instead.

My eggless cookies spread too much

Why it happens. Warm dough and too much liquid binder.

The fix. Chill the dough for 30 minutes, use a flax egg rather than yogurt, and bake on a cool tray.

The bread did not rise

Why it happens. Dead yeast or liquid that was too hot.

The fix. Proof yeast in liquid at 38-40°C for 10 minutes. If it does not foam, start again with fresh yeast.
